Whoops! Meant to post this on New Year’s Day, but these beans are so delicious, I hope you won’t mind the wait.
As most of y’all know, I’m from the South and every New Year’s Day we eat black eyed peas and greens for wisdom and wealth in the New Year. This isn’t the way my mother and grandmothers make them, but with my version, you won’t miss the hambone.
Mary Beth’s Lucky Black Eyed Peas
2 tbsp oil
1 med onion, diced
3 cloves garlic, minced
cups cooked black eyed peas, or 2 cans, drained & rinsed
1 can diced tomatoes
1/4 cup brown sugar
2 tbsp apple cider vinegar
In a pit over medium heat, heat oil. Add onions and sautee until soft and beginning to brown, about 10 minutes. Add garlic and sautee until soft and fragrant, about 2 minutes. Add remaining ingredients and cook until the tomatoes have broken down and formed a thick sauce.
